The Port at Huelva stands
out as a center in the so called Ruta del marisco, (Shellfish Route). In
its exchange is auctioned the daily catch of several marine species, like
plaice, sole, giltheads and sheepsheads, as well as crayfish, king prawns
and shrimp of excellent quality. The Huelva cuisine, in view of its superb
raw materials, offers a great variety of marine dishes, among which stands
the small cuttle fish with beans, small hake with garlic, corvina fish
with green peas and scooped needle fish. For meats, basically the hunting
game of the Andévalo and Aracena Mountains; the rabbit with tomato
sauce is delicious. Needless to say that either the mountain style ham
or the minced pork sausage stuffings are the best accompaniment for the
El Condado wines, produced in a similar way to the more famous ones from
Jerez. |
